Preheat the oven to 220°C. Cut the zucchini into bars about 7-8 cm long and 1-1.5 cm thick.

Whisk the eggs in a bowl. In a separate bowl, mix together the breadcrumbs, Parmesan, Italian herbs and 1/4 tsp salt.

Place sliced zucchini in a large bowl, sprinkle with flour and the remaining salt, and stir to coat evenly.

Dip each zucchini bar first in the egg, then coat in the breadcrumb mixture.

Place the breaded sticks on a rack set on a baking tray, leaving a little space between them. Bake for 20 minutes until golden brown and crispy. Serve immediately with tomato sauce for dipping.
